Grilled Lime Prawns with Pineapple Salsa

Ingredients
- 500g prawns, peeled & deveined
- Juice 2 limes
- 3 tablespoon olive oil
- 3 cloves garlic, minced
- 1 tsp paprika
- ½ tsp cayenne pepper
- Salt & pepper, to taste
- 1 cup fresh pineapple, diced
- ½ red capsicum, diced
- ¼ red onion, carefully diced
- 3 tablespoon marinaded jalapeños, sliced
- Juice 1 lime
- 2 tablespoon fresh coriander, sliced
- Salt, to taste
Method
- In a bowl, integrate the lime juice, olive oil, minced garlic, paprika, cayenne pepper, salt and pepper. Mix well to produce a marinade.
- Place the prawns in a shallow meal and put the marinade over them.
