Thai Sweet Potato Sticks

Try this healthy twist on conventional Thai sweet potato balls. Not sweet, not savoury however insomeway someplace in inbetween, these sticks are baked upuntil crisp on the outside and fluffy and aromatic on the within. Serve with a Thai dipping sauce.
Ingredients
- 500g sweet potatoes
- 3 tablespoon Massaman curry paste
- 60g cornflour
- 1 egg
- 1 tablespoon fish sauce
- 1 tablespoon lime juice
- ½ lot coriander, sliced
Method
- Scrub sweet potatoes and prick anumberof times with a fork, set on a plate and microwave exposed on high for 7 minutes.
- Check with a skewer and continue microwaving in 1-2-minutes bursts upuntil totally prepared and the skewer passes quickly through the centre. Allow them to cool adequate to
