Ingredients

  • 270g container sundried tomatoes in oil, approximately slice the tomatoes & reserve oil
  • 4 cloves garlic, crushed
  • 1½ tablespoon sliced rosemary leaves
  • Good pinch chilli flakes, optional
  • 1/3 cup shredded parmesan
  • ¼ cup roasted almonds or cashews
  • Juice 1 medium lemon
  • Light olive oil, if required
  • Salt & pepper, to taste
  • 500g Grand Italian Potato Gnocchi
  • 30 x 10cm-diameter pieces salami, cutinhalf (a spicy salami works well)
  • 1/3-½ cup shredded parmesan, additional
