Berry Chia Pudding

This is one of my preferred things to meal preparation at the start of the week for a fast and healthy breakfast or treat (or even dessert!) While chia can appear costly, a little goes a long method and it can work out to as little as 25 cents per serve! There are not lotsof other foods that can contend with that for the dietary punch it loads as it’s a terrific source of fiber, protein and omega-3s.
Ingredients
- 500mL plant milk
- 1/3 cup chia seeds
- 1 tablespoon vanilla essence or extract
- ½ cup berries, plus a coupleof additional to garnish
- ½-1 cup coconut yoghurt
