Golden Egg Curry

I’m not going to lie — I was surprised at how much I liked this dish. While lookinginto this food, I kept coming throughout referrals to Golden Egg Curry and the image in my head was absolutelynothing like the real meal. I might neverever consume eggs any other method and this curry sauce is moderate sufficient for my delicate stomach while still being abundant with flavour.
Ingredients
- 6 eggs
- 100mL peanut oil, plus additional
- 1 tsp turmeric powder
- 2 medium onions, veryfinely sliced
- 2 tsp garlic paste
- 2 tsp curry powder
- 1 tsp chilli powder
- 2 tsp fish sauce
- 2 tins crushed tomatoes
- ¼ cup water
- Ground dried shrimp (optional garnish)
Method
- Boil the eggs for approx. 6 minutes or upuntil simply company. Once prepared, plunge into ice water to stop the cooking and peel thoroughly when cooled.
- Heat the peanut oil in a pan over medium-high heat and include the turmeric powder.
