San Choy Bow

San Choy Bow is such a quick and scrumptious meal to make for the entire household. Serve it warm or cold, in these simple lettuce cups, for a household on the relocation.
Ingredients
- 1 tablespoon oil
- 2 tsp minced garlic
- 2 tsp minced ginger
- 500g pork, chicken or turkey mince
- 1 tablespoon kecap manis (sweet soy sauce)
- 2 tsp soy sauce
- 1 tsp sesame oil
- 100g vermicelli noodles
- 1 cup bean sprouts
- 1 carrot, grated
- ¼ cup fresh coriander leaves, sliced
- 2 green spring onions, veryfinely sliced
- Cos lettuce leaves, to serve
Method
- Heat the oil in a pan and cook the garlic and ginger rapidly for 1-2 minutes.
- Add the mince and cook till browned.
- Add the kecap manis, soy sauce and sesame oil and cook on medium-high heat for about 5 minutes upuntil it is deep brown and caramelised.
- Prepare the vermicelli noodles according to package guidelines.
- Add the bean sprouts, grated carrot, coriander and spring onions and cook for 1 more minutes upuntil simply prepared tender.
- Toss through the noodles and serve in lettuce cups.
- Note: This is likewise tasty served in a wrap.
