Step 1
Place a rack in middle of oven; preheat to 450°. Place 2 pound. sweet potatoes (about 4 medium or 6 little), scrubbed, cut into ½“-thick wedges, on a foil-lined rimmed baking sheet. Drizzle extra-virgin olive oil over, season with kosher salt, and toss to coat. Spread out sweet potatoes in a single layer on baking sheet and roast, turning midway through, till tender and browned in areas, 35–40 minutes.
Step 2
Meanwhile, heat 1 Tbsp. extra-virgin olive oil in a big fryingpan over medium-high. Cook 1 pound. ground beef, undisturbed, till well browned beneath, about 3 minutes. Add 1½ tsp. ground cumin, 1 tsp. smoked paprika, and 1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt; season kindly with freshly ground pepper. Cook
