Burmese Air-Fried Chicken & Dipping Sauce

A healthy alternative to fried chicken with staple herbs and spices. This can be a delicious treat or a meal with rice and salad.
Ingredients
- 600g chicken thigh fillets, sliced into 3cm-long strips
- Cooked rice
- Mixed lettuce leaves
- Coriander, to taste
- Spray cooking oil
- 1 tsp turmeric powder
- 1 tsp paprika
- 1 tsp garlic salt
- 1 tsp ginger powder
- 3 tablespoon plain flour
- ½ tsp chilli powder
- 3 tablespoon soy sauce
- 1 tsp fish sauce
- ½ tsp chilli powder (optional)
- Juice 1 lime
- 2 tsp minced ginger
Method
- In a medium-size bowl, integrate all dry rub components. Add in the chicken and toss till well covered.
- Lightly spray skilled chicken with light cooking oil and cook in an air fryer for 15 minutes on 180°C. Turn chicken midway through to guarantee both sides are prepared uniformly.
- While chicken is cooking, integrate all dipping sauce activeingredients in a little bowl and set aside.
- Once chicken is done, plate up with rice, a bed of combined lettuce and dipping sauce.
- Top with coriander to taste and serve instantly.
- Tip: Use drumsticks as an option to thigh fillets, however double the spice rub mix for 1-1.2kg drumsticks.
