Burmese Air-Fried Chicken & Dipping Sauce

A healthy alternative to fried chicken with staple herbs and spices. This can be a delicious treat or a meal with rice and salad.



Ingredients

  • 600g chicken thigh fillets, sliced into 3cm-long strips
  • Cooked rice
  • Mixed lettuce leaves
  • Coriander, to taste
  • Spray cooking oil
  • 1 tsp turmeric powder
  • 1 tsp paprika
  • 1 tsp garlic salt
  • 1 tsp ginger powder
  • 3 tablespoon plain flour
  • ½ tsp chilli powder
  • 3 tablespoon soy sauce
  • 1 tsp fish sauce
  • ½ tsp chilli powder (optional)
  • Juice 1 lime
  • 2 tsp minced ginger


Method

  • In a medium-size bowl, integrate all dry rub components. Add in the chicken and toss till well covered.
  • Lightly spray skilled chicken with light cooking oil and cook in an air fryer for 15 minutes on 180°C. Turn chicken midway through to guarantee both sides are prepared uniformly.
  • While chicken is cooking, integrate all dipping sauce activeingredients in a little bowl and set aside.
  • Once chicken is done, plate up with rice, a bed of combined lettuce and dipping sauce.
  • Top with coriander to taste and serve instantly.
  • Tip: Use drumsticks as an option to thigh fillets, however double the spice rub mix for 1-1.2kg drumsticks.
