Cauliflower Fritters

CORN THINS® pieces are not rice cakes. They’re made from corn and taste scrumptious — like popcorn crushed into a healthy crispbread.
Ingredients
- 6 CORN THINS pieces
- 1 cup grated cauliflower
- ¼ red onion, carefully sliced
- 2 tablespoon sliced parsley
- 2 tsp water
- 1 egg, gently blended
- ¼ tsp ground cumin
- ¼ tsp ground turmeric
- 1 tsp extra-virgin olive oil
Method
- In a food processor, procedure the CORN THINS pieces upuntil a fine texture.
- In a bowl, include the cauliflower, onion, parsley, water, egg and spices and mix well. Add in the CORN THINS flour mix and integrate well.
- Drizzle extra-virgin olive oil into a non-stick fryingpan and location over medium heat.
- Scoop up 1/3 cup of the mix, type into a patty, location in the pan and press down alittle.
- Cook for 3-4 minutes or till the fritter is golden and prepared through.
