Hummus, Baby Spinach, Chargrilled Capsicum & Haloumi

Ingredients
- 60g haloumi, cut into pieces
- 1 tbs olive oil (for cooking the haloumi)
- 1-2 tablespoon hummus
- 3 CORN THINS pieces
- Small handful infant spinach leaves
- Chargrilled capsicum
- (store-bought or make your own) Dukkha (optional)
Method
- Cook the haloumi in a frying pan with olive oil. Cook on each side till gently brown. This oughtto take just a coupleof minutes on a medium heat. Once prepared, location on a paper towel to cool and getridof excess oil from cooking.
- Spread a generous quantity of hummus throughout each CORN THINS piece, then layer on some child spinach leaves. Place the haloumi on top of the child spinach, then surface with your wanted quantity of grilled capsicum. Sprinkle with spices or dukkha if wanted.
