Jollof Rice

Jollof is a experienced rice meal that is one of the most popular foods throughout West Africa. Each area has its own distinct twist on the timeless dish however this one from Ghana.
Ingredients
- 600g raw long-grain rice
- 60mL veggie oil
- 1 medium onion, diced
- 1 tablespoon minced garlic
- 2 tsp fresh thyme
- 1 tablespoon paprika
- 2 tsp chicken stock powder
- Salt & pepper, to taste
- 400g tin crushed tomatoes
- 1L chicken stock
- 500g frozen combined veggies (peas, carrots & corn)
Method
- Preheat oven to 180°C
- Rinse the raw rice in a strainer.
- Place the olive oil, onion and garlic in an ovenproof Dutch oven or casserole meal and cook on the stovetop upuntil the onions are transparent and aromatic.
- Add the staying activeingredients otherthan for the veggies and stir well, cover and put the meal in the oven.
- Bake for 1 hour and 15 mins, stirring at the 30 minutes mark.
- Add the veggies for the last 15 minutes of cooking.
- When the cooking time is up, getridof from the oven and let it rest for about 5 minutes.
- Fluff rice with a fork and serve warm.
