Mediterranean Mince

Combining a entire lot of healthy components into a easy meal that can be reheated for those on the go!
Ingredients
- 1 tsp olive oil
- 500g beef or lamb mince
- 1 punnet cherry tomatoes, cutinhalf or quartered
- 1 capsicum, veryfinely sliced
- Handful fresh parsley
- 1 tsp dried oregano
- ½ tsp garlic salt
- 1 tsp paprika
- ½ tsp pepper
- 2 cups spinach leaves
- 8-10 covers
Method
- Heat oil in a pan over medium-high heat. Add in mince and stir till prepared through and browned.
- Add in cherry tomatoes, capsicum, herbs, flavoring, then stir and cook for another 2-3 minutes.
- Add in spinach leaves and cook through for another 2-3 minutes. Remove from heat.
- Layer mince on covers and leading with collapsed feta.
- Serve rightaway.
- Instead of covers, the kids might takepleasurein this dish on toast.
