Mediterranean Mince

Combining a entire lot of healthy components into a easy meal that can be reheated for those on the go!



Ingredients

  • 1 tsp olive oil
  • 500g beef or lamb mince
  • 1 punnet cherry tomatoes, cutinhalf or quartered
  • 1 capsicum, veryfinely sliced
  • Handful fresh parsley
  • 1 tsp dried oregano
  • ½ tsp garlic salt
  • 1 tsp paprika
  • ½ tsp pepper
  • 2 cups spinach leaves
  • 8-10 covers


Method

  • Heat oil in a pan over medium-high heat. Add in mince and stir till prepared through and browned.
  • Add in cherry tomatoes, capsicum, herbs, flavoring, then stir and cook for another 2-3 minutes.
  • Add in spinach leaves and cook through for another 2-3 minutes. Remove from heat.
  • Layer mince on covers and leading with collapsed feta.
  • Serve rightaway.
  • Instead of covers, the kids might takepleasurein this dish on toast.
