Miso-Glazed Salmon with Soba Noodles & Stir-Fry Vegetables

This meal integrates the umami flavours of miso-glazed salmon with nutty soba noodles and lively stir-fry veggies. It’s a healthy and flavourful meal that’s both healthy and pleasing.
Ingredients
- 3 tablespoon white miso paste
- 2 tablespoon rice-wine vinegar
- 2 tablespoon soy sauce
- 1 tablespoon honey
- 1 tablespoon sesame oil
- 4 salmon fillets
- 100g soba noodles, dried (cook to directions)
- 2 tsp minced garlic
- Assorted stir-fry veggies (capsicum, broccoli, snow peas, carrots)
- 1 tablespoon sesame oil
- 2 tablespoon soy sauce
Method
- Preheat oven to 200°C.
- Mix the miso paste, vinegar, soy sauce, honey and sesame oil in a bowl. Coat the salmon fillets with this glaze and bake for 12-15 minutes or till the salmon is prepared through.
- Cook the soba noodles according to the plan directions. Drain and set aside.
- In a wok, stir-fry the garlic and various veggies in sesame oil. Add soy sauce and toss in the prepared soba noodles. Stir to integrate.
- Serve the miso-glazed salmon over the soba noodles and veggies. Garnish with sesame seeds and sliced green onions.
- Store leftovers in an airtight container, refrigerate and reheat to preferred temperaturelevel at lunchbreak the next day.
- Tip: For included freshness, capture a bit of lime juice over the meal simply previously serving.
