One-Pot Chicken & Mushroom Paella

Ingredients
- 500g chicken breast, diced
- 50g oyster mushrooms
- 2 tablespoon olive oil
- 1 onion, diced
- 2 tsp minced garlic
- 1 red capsicum, diced
- 1 green capsicum, diced
- 1 cup Arborio rice (or other short-grain rice)
- 1 tsp smoked paprika
- ½ tsp ground turmeric
- ½ tsp saffron threads
- 2 cups veggie broth
- 400g tin diced tomatoes, undrained
- 2 cups frozen peas
- Salt & pepper, to taste
