One-Pot Chicken & Mushroom Paella

Ingredients

  • 500g chicken breast, diced
  • 50g oyster mushrooms
  • 2 tablespoon olive oil
  • 1 onion, diced
  • 2 tsp minced garlic
  • 1 red capsicum, diced
  • 1 green capsicum, diced
  • 1 cup Arborio rice (or other short-grain rice)
  • 1 tsp smoked paprika
  • ½ tsp ground turmeric
  • ½ tsp saffron threads
  • 2 cups veggie broth
  • 400g tin diced tomatoes, undrained
  • 2 cups frozen peas
  • Salt & pepper, to taste

  • Fresh parsley, to garnish (optional)


Method

  • Heat the olive oil in a big fryingpan over medium-high heat.
