Raspberry & Blueberry Friands

Be mindful with these delicious little cakes. It’s tough not to consume the whole batch!



Ingredients

  • 140g butter, plus additional to grease tin
  • 50g slivered almonds
  • 50g slivered almonds
  • 90g gluten-free flour
  • 175g icing sugar
  • 2 egg whites
  • 2 egg whites
  • Blueberries


Method

  • Preheat oven to 180°C.
  • Heat butter in a little pan over medium heat till it begins to brown.
  • Place the pan in a bowl of cold water to stop the cooking procedure.
  • Place dry components in a bowl.
  • Beat egg whites till foamy and include to dry activeingredients along with cooled butter and mix well.
  • Place in refrigerator for 2 hours.
  • Grease a friand tin with butter and divide the mix inbetween them.
  • Place a coupleof berries into each 1 and bake for 13-15 minutes or upuntil they spring back when carefully touched.
  • Tip: Toast the almonds in a pan over medium heat to include a somewhat various flavour.
