Tofu Scramble with Tomato

CORN THINS® pieces are not rice cakes. They’re made from corn and taste scrumptious — like popcorn crushed into a healthy crispbread.
Ingredients
- 3-4 CORN THINS pieces
- 0.25 tsp ground turmeric
- Pinch pepper
- 80g silken tofu
- 60g company tofu (calcium set)
- 4-5 cherry tomatoes, halved
- Extra-virgin olive oil spray
Method
- Place the turmeric, black pepper and silken tofu into a little blending bowl and whisk together upuntil a smooth and velvety texture hasactually been produced.
- Chop the company tofu carefully and fold into the silken tofu mix.
- Heat a medium frying pan and spray gently with the extra-virgin olive oil spray.
- Pour the tofu mix into the frying pan and stir carefully for 5-8 minutes or till the mix hasactually endedupbeing a rushed texture.
- Add the cherry tomatoes and cook for an extra minute.
- Serve on top of 3-4 CORN THINS pieces.
