Plantein Tenders with Sweet Chilli Soba Noodles

Ingredients

  • 350g soba noodles
  • 1 x package Plantein Sweet Chilli Tenders
  • 2 cups infant spinach
  • 1 cup carrot, diced
  • 1 cup edamame beans, blanched
  • 2.5cm portion fresh ginger, grated
  • 2 cloves garlic, minced
  • 2 tablespoon light soy sauce
  • 2 tsp maple syrup
  • 1 moderate red chilli, seeds gottenridof, carefully diced
  • 1 tsp dried chilli flakes


Method

  • Cook soba noodles according to package directions. Place the noodles aside in a bowl with ice and water while preparing the other activeingredients. Drain when allset to serve.
  • Preheat oven to 180°C. Line a big baking tray with parchment paper. Place tenders on the tray and cook for 10-15 minutes or upuntil prepared through. Once prepared, cut into medium pieces.
  • In a little bowl integrate the sauce components, and include a splash of water if needed. Arrange the noodles and veggies in a serving bowl. Top with prepared tenders. Drizzle over the sweet chilli sauce. For an included kick, drizzle over some Asian chilli oil.
