Plantein Tenders with Sweet Chilli Soba Noodles

Ingredients
- 350g soba noodles
- 1 x package Plantein Sweet Chilli Tenders
- 2 cups infant spinach
- 1 cup carrot, diced
- 1 cup edamame beans, blanched
- 2.5cm portion fresh ginger, grated
- 2 cloves garlic, minced
- 2 tablespoon light soy sauce
- 2 tsp maple syrup
- 1 moderate red chilli, seeds gottenridof, carefully diced
- 1 tsp dried chilli flakes
Method
- Cook soba noodles according to package directions. Place the noodles aside in a bowl with ice and water while preparing the other activeingredients. Drain when allset to serve.
- Preheat oven to 180°C. Line a big baking tray with parchment paper. Place tenders on the tray and cook for 10-15 minutes or upuntil prepared through. Once prepared, cut into medium pieces.
- In a little bowl integrate the sauce components, and include a splash of water if needed. Arrange the noodles and veggies in a serving bowl. Top with prepared tenders. Drizzle over the sweet chilli sauce. For an included kick, drizzle over some Asian chilli oil.
