Raspberry & Blueberry Friands

Be mindful with these delicious little cakes. It’s tough not to consume the whole batch!
Ingredients
- 140g butter, plus additional to grease tin
- 50g slivered almonds
- 50g slivered almonds
- 90g gluten-free flour
- 175g icing sugar
- 2 egg whites
- 2 egg whites
- Blueberries
Method
- Preheat oven to 180°C.
- Heat butter in a little pan over medium heat till it begins to brown.
- Place the pan in a bowl of cold water to stop the cooking procedure.
- Place dry components in a bowl.
- Beat egg whites till foamy and include to dry activeingredients along with cooled butter and mix well.
- Place in refrigerator for 2 hours.
- Grease a friand tin with butter and divide the mix inbetween them.
- Place a coupleof berries into each 1 and bake for 13-15 minutes or upuntil they spring back when carefully touched.
- Tip: Toast the almonds in a pan over medium heat to include a somewhat various flavour.
