Vegan Carnitas Bowl

These jackfruit carnitas are really comparable in appearance and texture to pulled pork and have a scrumptious, deep, earthy flavour thanks to the marinade.



Ingredients

  • 2 tins jackfruit, drainedpipes & approximately pulled apart with forks
  • 2 tsp cumin
  • 2 tsp salt
  • ½ tsp dried oregano
  • ½ tsp onion powder
  • ¼ tsp ground black pepper
  • 1 tsp garlic
  • ½ tsp Mexican chilli
  • 375mL bottle beer


Method

  • Place the activeingredients into a big bowl and stir to integrate.
  • Cover and marinade in the refrigerator for at least 2 hours.
  • Preheat your oven to 200°C and line a big oven tray.
  • Drain the jackfruit and spread it out in a thin layer on your tray.
  • Bake for 15-20 minutes. Finish off under a hot grill to get those charming, caramelised edges.
  • Serve as a huge carnitas bowl with lettuce, spinach, tomato, cucumber, coriander, lime wedges and dairy-free sour cream.
